Ingredients

  • 1 small onion, cut into chunks
  • 1 pound ground lamb
  • 1 pound ground beef
  • 1 tablespoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon sea salt
  • 12 tablespoons hummus
  • 12 pita bread rounds
  • 1 small head lettuce, shredded
  • 1 large tomato, sliced
  • 1 large red onion, sliced
  • 6 ounces crumbled feta cheese
  • 24 tablespoons tzatziki sauce

Directions

  • Place the onion in a food processor and finely chop it.
  • Transfer the chopped onion to a piece of cheesecloth and squeeze out as much liquid as possible.
  • Place the drained onion in a large bowl.
  • Add the ground lamb, ground beef, garlic, oregano, cumin, marjoram, thyme, rosemary, black pepper, and sea salt.
  • Mix everything thoroughly with your hands until well combined.
  • Cover the bowl and refrigerate for about 2 hours to allow the flavors to blend.
  • Preheat the oven to 325°F (165°C).
  • Transfer the chilled meat mixture to a food processor and pulse for about 1 minute, until finely chopped and sticky.
  • Pack the meat mixture tightly into a 7×4-inch loaf pan, making sure there are no air pockets.
  • Place the loaf pan inside a larger roasting pan.
  • Pour enough boiling water into the roasting pan to reach halfway up the sides of the loaf pan.
  • Bake for 45 to 60 minutes, or until the center is no longer pink and reaches an internal temperature of at least 165°F (74°C).
  • Carefully pour off any accumulated fat and let the meat cool slightly.
  • Thinly slice the cooked gyro meat.
  • Spread 1 tablespoon of hummus onto each pita bread.
  • Add sliced gyro meat, shredded lettuce, tomato, red onion, crumbled feta cheese, and 2 tablespoons of tzatziki sauce to each pita.
  • Fold the pita around the fillings and serve immediately.
