Ingredients
For the Fish
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1¼ cups very cold light beer
- Extra all-purpose flour, for dredging
- 1½ pounds cod, haddock, halibut, or another firm white fish, cut into 4 pieces
- Oil, for frying
For the Chips
- 4 large Russet potatoes, peeled and cut into thick fries
- Oil, for frying
- Salt, to taste
- Malt vinegar, for serving (optional)
Directions
- Peel and slice the potatoes into thick fries, then soak them in cold water while preparing the remaining ingredients.
- Heat the frying oil to 325°F (163°C).
- Drain the potatoes thoroughly and pat them dry with paper towels.
- Fry the potatoes in small batches for 2 to 3 minutes until softened but not browned.
- Remove the fries from the oil and let them cool while increasing the oil temperature to 375°F (190°C).
- Fry the potatoes a second time for another 2 to 3 minutes until golden and crispy. Sprinkle with salt and keep warm.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Slowly pour in the very cold beer and whisk until the batter is smooth.
- Lightly coat each fish fillet with extra flour, shaking off any excess.
- Dip the fish into the beer batter, making sure each piece is fully coated.
- Carefully lower the battered fish into the hot oil.
- Fry for 5 to 8 minutes, or until the coating is crisp and golden and the fish is fully cooked.
- Transfer the fish to a paper towel-lined plate to drain any excess oil.
- Serve the crispy fish immediately with the hot chips and malt vinegar, if desired.
