Ingredients
For the Chow Mein
- 200g (6 ounces) chicken breast or chicken thighs, thinly sliced
- 200g (6 ounces) chow mein noodles
- 4 cups green cabbage, finely shredded
- 1 carrot, julienned
- 1½ cups bean sprouts
- 3 green onions, cut into 2-inch pieces
- 2 cloves garlic, finely chopped
- 1½ tablespoons peanut oil (or any cooking oil)
- ¼ cup water
For the Sauce
- 2 teaspoons cornstarch
- 1½ tablespoons soy sauce
- 1½ tablespoons oyster sauce
- 1½ tablespoons Chinese cooking wine or mirin
- 2 teaspoons sugar
- ½ teaspoon sesame oil
- White pepper, to taste
Directions
- In a small bowl, whisk together the cornstarch, soy sauce, oyster sauce, Chinese cooking wine, sugar, sesame oil, and white pepper until smooth.
- Place the sliced chicken in a bowl and toss with 1 tablespoon of the prepared sauce. Let it marinate for 10 minutes.
- Prepare the chow mein noodles according to the package instructions, then drain and set aside.
- Heat the oil in a large wok or skillet over high heat.
- Add the chopped garlic and stir-fry for about 10 seconds until fragrant.
- Add the marinated chicken and cook for about 1 minute until lightly browned on the outside.
- Stir in the cabbage, carrot, and the white parts of the green onions. Cook for 1 to 2 minutes until the vegetables begin to soften.
- Add the cooked noodles, remaining sauce, and water. Toss everything together for about 1 minute until the noodles are evenly coated.
- Add the bean sprouts and the green parts of the onions. Stir-fry for another 30 seconds until the bean sprouts are just tender.
- Remove from the heat and serve immediately while hot.
