Ingredients
- 2 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon smoked paprika
- 1 tablespoon brown sugar
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 1 (7 pound) pork shoulder roast
- Unbleached parchment paper
- Heavy duty aluminum foil
Directions
- Preheat the oven to 225°F (110°C).
- In a bowl, combine kosher salt, black pepper, smoked paprika, brown sugar, onion powder, garlic powder, and cayenne pepper to make the dry rub.
- Coat the pork shoulder evenly with the seasoning mixture, pressing it firmly onto all sides of the meat.
- Cut a 4-foot piece of unbleached parchment paper and place the pork shoulder at one end. Roll it tightly in the parchment.
- Cut a second piece of parchment paper and wrap the roast again in the opposite direction.
- Wrap the parchment-covered roast tightly in a large sheet of heavy duty aluminum foil.
- Repeat the foil wrapping two more times, rotating the roast with each layer to help seal in moisture.
- Place the wrapped roast in a roasting pan with the folded edges facing upward.
- Roast in the preheated oven for about 12½ hours, or approximately 1.75 hours per pound, until the pork is extremely tender.
- Remove the roast from the oven and allow it to rest for at least 1 hour before unwrapping.
- Carefully open the wrapping and brush the pork with any juices collected in the parchment paper.
- Slice, shred, or serve as desired.
