Ingredients

  • 4 teaspoons active dry yeast

  • 1 ¼ cups warm water (110 degrees F/45 degrees C), or more as needed
  • 5 cups all-purpose flour
  • ½ cup white sugar
  • 1 ½ teaspoons salt
  • 1 tablespoon vegetable oil, plus more for greasing
  • 4 cups hot water
  • ½ cup baking soda
  • ¼ cup kosher salt, for topping

Directions

  • Dissolve the yeast and 1 teaspoon sugar in the warm water. Let it stand for about 10 minutes until the mixture becomes foamy.
  • In a large bowl, combine the flour, ½ cup sugar, and 1½ teaspoons salt.
  • Make a well in the center and add the yeast mixture along with 1 tablespoon vegetable oil.
  • Mix until a dough forms. If the dough seems dry, add a little extra water as needed.
  • Knead the dough on a lightly floured surface for about 7 minutes until smooth and elastic.
  • Lightly oil a large bowl and place the dough inside, turning it to coat all sides.
  • Cover and let the dough rise in a warm place for about 1 hour, or until doubled in size.
  • Preheat the oven to 450°F (230°C) and grease two baking sheets.
  • Stir the baking soda into the hot water until dissolved and set aside.
  • Turn the dough onto a lightly floured surface and divide it into 12 equal pieces.
  • Roll each piece into a long rope and shape it into a traditional pretzel.
  • Dip each shaped pretzel into the baking soda solution, then place it on the prepared baking sheets.
  • Sprinkle the tops with kosher salt.
  • Bake for about 8 minutes, or until the pretzels are golden brown.
  • Remove from the oven and serve warm.
