Ingredients

  • 12 to 14 Persian cucumbers or 8 to 10 pickling cucumbers
  • 4 garlic cloves, halved
  • 2 teaspoons mustard seeds
  • 2 teaspoons peppercorns
  • Fresh dill sprigs, a few per jar
  • 2 cups water
  • 2 cups distilled white vinegar
  • ΒΌ cup cane sugar
  • 2 tablespoons sea salt

Directions

  • Slice the cucumbers lengthwise into quarters for pickle spears or thinly slice them into rounds for pickle chips.
  • Divide the cucumbers evenly among 4 (8-ounce) jars or 2 (16-ounce) jars.
  • Add the garlic, mustard seeds, peppercorns, and fresh dill sprigs to each jar.
  • In a medium saucepan, combine water, vinegar, sugar, and salt. Heat over medium heat, stirring until the sugar and salt completely dissolve, about 1 minute.
  • Remove the brine from the heat and allow it to cool slightly.
  • Pour the brine evenly over the cucumbers in the jars, making sure they are fully covered.
  • Let the jars cool to room temperature.
  • Seal the jars and place them in the refrigerator.
  • For pickle chips, refrigerate for at least 1 day before serving. For pickle spears, refrigerate for at least 2 days.
  • For the best flavor, allow the pickles to develop in the refrigerator for 5 to 6 days before enjoying.
