- 1 cup white sugar
- ½ cup light corn syrup
- ¼ cup water
- ¼ teaspoon salt
- 1 cup peanuts
- 2 tablespoons unsalted butter
- 1 teaspoon baking soda
Directions
- Prepare a large baking sheet by greasing it lightly and set it aside. Measure all ingredients in advance because the cooking process moves quickly.
- In a heavy saucepan, add sugar, corn syrup, water, and salt, then heat over medium flame. Stir until the sugar fully dissolves and the mixture starts boiling.
- Add peanuts to the boiling mixture and attach a candy thermometer. Continue cooking while stirring occasionally until it reaches 300 to 310°F (hard crack stage).
- Remove the pan from heat and quickly mix in butter and baking soda until the mixture becomes light and foamy.
- Immediately pour the hot mixture onto the prepared baking sheet and spread it evenly using a spatula or forks.
- Allow it to cool completely at room temperature until it becomes firm and crunchy.
- Once hardened, break the brittle into pieces and serve or store in an airtight container.
