Ingredients
- ¾ teaspoon dried rosemary
- ½ teaspoon dried thyme
- ¼ teaspoon dried basil
- Salt and pepper, to taste
- 4 lamb chops (¾-inch thick)
- 1 tablespoon olive oil
- ¼ cup minced shallots
- ⅓ cup aged balsamic vinegar
- ¾ cup chicken broth
- 1 tablespoon butter
Directions
- In a small bowl, combine rosemary, thyme, basil, salt, and pepper.
- Rub the seasoning mixture over both sides of the lamb chops.
- Place the chops on a plate, cover, and let rest for 15 minutes.
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the lamb chops for about 3½ minutes per side, or until they reach an internal temperature of 145°F (63°C) for medium-rare.
- Transfer the chops to a serving platter and keep warm.
- Add the minced shallots to the same skillet and cook for 2 to 3 minutes until lightly browned.
- Pour in the balsamic vinegar and bring to a boil, scraping up any browned bits from the bottom of the pan.
- Add the chicken broth and cook until the sauce is reduced by half, about 5 minutes.
- Remove the skillet from the heat.
- Stir in the butter until completely melted and incorporated.
- Spoon the balsamic reduction over the lamb chops and serve immediately.
