Ingredients

  • ¾ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried basil
  • Salt and pepper, to taste
  • 4 lamb chops (¾-inch thick)
  • 1 tablespoon olive oil
  • ¼ cup minced shallots
  • ⅓ cup aged balsamic vinegar
  • ¾ cup chicken broth
  • 1 tablespoon butter

Directions

  • In a small bowl, combine rosemary, thyme, basil, salt, and pepper.
  • Rub the seasoning mixture over both sides of the lamb chops.
  • Place the chops on a plate, cover, and let rest for 15 minutes.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Cook the lamb chops for about 3½ minutes per side, or until they reach an internal temperature of 145°F (63°C) for medium-rare.
  • Transfer the chops to a serving platter and keep warm.
  • Add the minced shallots to the same skillet and cook for 2 to 3 minutes until lightly browned.
  • Pour in the balsamic vinegar and bring to a boil, scraping up any browned bits from the bottom of the pan.
  • Add the chicken broth and cook until the sauce is reduced by half, about 5 minutes.
  • Remove the skillet from the heat.
  • Stir in the butter until completely melted and incorporated.
  • Spoon the balsamic reduction over the lamb chops and serve immediately.
