Ingredients
- 10 lemons
- 1 liter vodka
- 4 cups water
- 3 cups white sugar
Directions
- Wash and dry the lemons thoroughly.
- Zest the lemons, avoiding the bitter white pith.
- Place the lemon zest in a large glass jar or bottle.
- Pour the vodka over the zest.
- Cover loosely and let the mixture infuse at room temperature for 1 week.
- After 1 week, combine the water and sugar in a medium saucepan.
- Bring the mixture to a boil without stirring.
- Boil for 15 minutes.
- Remove the syrup from the heat and allow it to cool completely.
- Stir the lemon-infused vodka into the cooled syrup.
- Strain the mixture into clean glass bottles.
- Seal the bottles tightly.
- Let the limoncello age at room temperature for 2 weeks.
- Store in the freezer until thoroughly chilled.
