Ingredients

  • 1 quart vegetable oil, for frying
  • ½ cup all-purpose flour
  • ½ cup self-rising cornmeal
  • ½ onion, minced
  • ½ cup milk
  • 1 egg, beaten
  • 1 stalk celery, minced
  • 2 cloves garlic, minced
  • 1 pinch Cajun seasoning, or to taste

Directions

  • Heat the vegetable oil in a deep fryer or large saucepan to 375°F (190°C).
  • In a mixing bowl, combine the flour, cornmeal, onion, milk, beaten egg, celery, garlic, and Cajun seasoning.
  • Stir until a smooth batter forms.
  • Scoop small portions of batter, about the size of a ping pong ball.
  • Carefully drop 4 to 5 batter balls at a time into the hot oil.
  • Fry until golden brown and crisp, about 5 minutes.
  • Remove the hush puppies with a slotted spoon.
