  • ¼ cup cornmeal

Directions

  • Warm the milk in a saucepan until small bubbles appear around the edges.
  • Remove from heat and stir in sugar until dissolved.
  • Allow the milk mixture to cool until lukewarm.
  • In a small bowl, combine warm water and yeast.
  • Let the yeast mixture stand for about 10 minutes until creamy.
  • In a large bowl, combine the milk mixture, yeast mixture, 3 cups flour, and melted shortening.
  • Beat until smooth.
  • Add salt and the remaining flour gradually to form a soft dough.
  • Knead the dough until smooth and soft.
  • Place dough in a greased bowl, cover, and let rise for about 1 hour until doubled in size.
  • Punch down the dough and roll it out on a lightly floured surface to about ½-inch thickness.
  • Cut out rounds using a biscuit cutter or glass.
  • Sprinkle cornmeal onto a surface and place dough rounds on top.
  • Dust the tops with additional cornmeal.
  • Cover and let rise for another 30 minutes.
  • Heat a greased griddle over medium heat.
  • Cook muffins for about 10 minutes on each side until golden brown.
  • Split and toast before serving if desired.
