Ingredients

  • 1 tablespoon vegetable oil
  • 3 boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, chopped
  • ¼ cup all-purpose flour
  • 4 cups chicken stock
  • 3 cups potatoes, cubed
  • 1 cup carrots, diced
  • 1 tablespoon chicken soup base
  • 1 tablespoon Herbes de Provence
  • 1 cup button mushrooms, sliced
  • ½ cup green bell pepper, diced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Directions

  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and chopped onion. Cook for 5 to 7 minutes until the chicken is lightly browned and onions become soft.
  3. Sprinkle flour over the chicken mixture and stir well until everything is evenly coated.
  4. Pour in the chicken stock and stir continuously to avoid lumps.
  5. Add potatoes, carrots, chicken soup base, and Herbes de Provence. Bring the stew to a gentle boil.

  7. Stir in mushrooms and green bell pepper. Continue cooking for another 10 to 15 minutes until vegetables are tender and the broth thickens.
  8. Season with salt and black pepper according to taste.
  9. Garnish with fresh parsley and serve hot with crusty bread or rice.
