Ingredients
- 6 chicken thighs, bone-in and skin-on
- Salt to taste
- Black pepper to taste
- Extra virgin olive oil
- 1 small yellow onion, chopped
- 2 celery ribs, chopped
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 8 ounces mushrooms, sliced
- 3 garlic cloves, minced
- 1 teaspoon oregano
- 3 sprigs fresh thyme
- 2 tablespoons fresh parsley, chopped
- Pinch of red pepper flakes
- 1 cup red wine
- 1 can crushed tomatoes
Directions
- Pat the chicken dry and season with salt and black pepper.
- Heat olive oil in a large deep skillet or braiser over medium-high heat.
- Add the chicken skin-side down and cook until golden brown on both sides, about 8 minutes total.
- Remove the chicken and set aside.
- In the same pan, add onion, celery, bell peppers, mushrooms, and garlic.
- Cook for 5 to 6 minutes until the vegetables soften.
- Stir in oregano, thyme, parsley, and red pepper flakes.
- Pour in the red wine and simmer for a few minutes until reduced slightly.
- Add the crushed tomatoes and stir well.
- Let the sauce simmer for 5 to 10 minutes.
- Return the chicken to the pan and nestle it into the sauce.
- Reduce heat to medium-low and cover the pan.
- Cook for about 30 minutes until the chicken is tender and fully cooked.
- Garnish with additional parsley before serving.
