Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • Salt to taste
  • Black pepper to taste
  • Extra virgin olive oil
  • 1 small yellow onion, chopped
  • 2 celery ribs, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 8 ounces mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon oregano
  • 3 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • Pinch of red pepper flakes
  • 1 cup red wine
  • 1 can crushed tomatoes

Directions

  • Pat the chicken dry and season with salt and black pepper.
  • Heat olive oil in a large deep skillet or braiser over medium-high heat.
  • Add the chicken skin-side down and cook until golden brown on both sides, about 8 minutes total.
  • Remove the chicken and set aside.
