Ingredients
1 (9-inch) pie crust (store-bought or homemade)
8 slices bacon, chopped
½ cup chopped onion
½ cup chopped leeks (optional)
3 large eggs
2 egg yolks
1 cup heavy cream
¾ cup milk
1 teaspoon fresh thyme
¾ cup shredded Gruyère cheese
Salt and black pepper to taste
Pinch of cayenne pepper (optional)

Directions
- Preheat the oven to 220°C (425°F). Place the pie crust in a dish and chill for 20 minutes.
- Blind bake the crust by lining it with foil and adding baking weights. Bake for 7 minutes, then remove the weights and bake for another 5 minutes until lightly golden.
- In a pan, cook the bacon until crispy. Remove and set aside. In the same pan, sauté onion and leeks until soft and slightly golden.
- Reduce oven temperature to 165°C (325°F).
- In a bowl, whisk eggs, egg yolks, cream, and milk. Add thyme, salt, pepper, and cayenne.
- Spread the cooked onions and half the bacon over the crust. Add cheese, then pour the egg mixture on top. Finish with remaining bacon and cheese.
- Bake for 40 to 45 minutes until the center is set but slightly soft.
- Let it cool for 15 to 20 minutes before slicing and serving.
