Ingredients
- 1 pound dried pinto beans, rinsed
- 4 cups water, or as needed
- 2 (10 ounce) cans diced tomatoes with green chile peppers
- 1/2 pound bacon, cut into small pieces
- 1 yellow onion, chopped
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 1/2 teaspoons garlic powder
- 1/2 bunch fresh cilantro, chopped
- Salt to taste
Directions
- Place the pinto beans in a large pot and cover with water by 2 to 3 inches.
- Soak the beans overnight, then drain and rinse.
- Return the beans to the pot and add fresh water to cover them.
- Add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder.
- Bring to a boil, then reduce heat and simmer for about 3 hours.
- Stir occasionally and add more water if needed to keep beans covered.
- Add chopped cilantro and salt, then continue cooking for about 1 hour until beans are tender.
- Serve hot.
